Given current usage, i very much doubt blessed is strictly considered religious (whatever that might mean) I'd use the two hyphens. A similar word is thankful, which is rarely ever ascribed to any deity in particular in popular usage.
Leaving non stranded doesn't work either as it is a bound morpheme, a prefix not a word (in english)
